Ingredients
- 1 large head cauliflower (florets only)
- 3 tbsp butter
- ¼ cup heavy cream (or half-and-half)
- 1 small clove garlic (optional, subtle)
- Salt
- white or black pepper
- 1–2 tbsp cream cheese (optional: for extra luxurious mash)
- 1–2 tbsp sour cream (optional: for extra luxurious mash)
Instructions

Steam florets 10–12 minutes until very tender.

Transfer cauliflower back to the hot pot (off heat) for 1–2 minutes to let steam escape.

Add butter, cream, garlic, salt, and pepper.

Blend with immersion blender or food processor until silky.
